Ingredients

- 2 tbsp oil
- 6-8 green chillis
- 0.5 kinnam corriander
- 3 onions
- 5 tomatos
- 0.5 tsp turmeric
- 2 tsp salt + 3 tsp salt
- 2 tsp sambar powder
- 2 tsp red chilli powder
- 5 tsp tamarind paste
- 1 tumbler water
- 4 tsp sugar

Steps to Prepare

1. Prepare the Ghotsu

  1. Cut the tomatos, onions, coriander and green chillis.
  2. Add 2 tbsp oil to a sauce pan and wait for it to get hot.
  3. Add the onions to the sauce pan and allow them to get lightly fried. Once they are slightly less raw, add 0.5 tsp of turmeric, 2 tsp of salt, 2 tsp of sambar powder and 2 tsp of red chilli powder and stir the onions till cooked well.

  4. Add the other cut vegetables into the dish and stir till the raw taste is gone and all vegetables are well cooked.

  5. Add 5 tsp of tamarind paste in a tumbler. Add water to fill the rest of the tumbler. Mix the tamarind paste with the water and then pour into the sauce pan. Also add 4 tsp of sugar to the sauce pan. Continue mixing and stirring. Also press into the vegetables with the lasel, in order to make the ghotsu a little more liquidy than just pieces in water.


  6. Mix and add spices and other additives until the flavour is right. Then pour into the final bowl for serving.



Serve the ghotsu as a side dish with venn pongal or dosa, upma, vada, idli etc.
